1. Heat 2–3 tablespoons of desi ghee in a karahi on medium-low. 2. Add a small handful of gond crystals — they puff up instantly into white-gold crunch (don't crowd the pan). 3. Remove as soon as they puff; burnt gond turns bitter. 4. Crush lightly and fold into panjiri with atta, almonds, walnuts, char magaz and gur — or bind into the classic gond ke laddu.
