If you've tried buying pistachios recently, you've felt it: prices are suddenly much higher than they used to be. Customers keep asking us, "Why did pistachios get so expensive?" Here's the honest answer — no roundabout talk.

1. The main reason: Iran border closure
A large share of the salted pistachios sold in Pakistan comes from Iran — the world's largest pistachio producer. Iranian pistachios are the market standard here: bigger kernels, better colour, the salted taste everyone knows. With the Iran-Pakistan border closed and trade restricted, supply has dropped to less than half of what it was. Less supply, higher prices — that's not a shopkeeper's excuse, that's the ground reality.
2. Winter demand
October to February is dry-fruit season in Pakistan: weddings, gift boxes, and the tradition of eating pistachios in cold weather. Demand peaks every year at exactly this time. Low supply plus peak demand pushes rates up. Simple math.

3. The tree and its harvest
A pistachio tree takes 7 to 10 years after planting before it starts producing nuts. That means when demand rises, supply cannot catch up quickly — new orchards pay off a decade later. This is why pistachios have always been a premium dry fruit.

4. From harvest to packing: processing
After harvest, pistachios are dried, sorted and graded. Plump, naturally split, clean-coloured nuts are separated from light or closed ones. Then they're soaked in salted water and roasted — that's the salted pistachio we all snack on.

Real vs fake pistachios — how to tell
- Genuine pistachios have naturally split shells and greenish-yellow kernels.
- If the shell looks forced open or the colour is unnaturally deep (added dye), be cautious.
- The kernel shouldn't feel soft when pressed — old pistachios go soft and tasteless.
- Always buy from a trusted seller who guarantees quality.

Frequently asked questions
Why have pistachio prices risen so suddenly?
The biggest reason is the Iran border closure — most of Pakistan's pistachios came from Iran. With supply cut, prices rose, and winter demand pushed them higher still.
Will pistachio prices come down again?
If the border reopens and supply normalises, prices can ease. But don't expect a quick drop during the winter season.
What's the difference between Iranian and local pistachios?
Iranian pistachios have bigger kernels, better colour and the classic salted taste — that's why they cost more. They're the standard in Pakistani markets.
Which is better: pistachio kernels or salted pistachios?
Both have their place. Kernels (maghaz) save you the shelling work and go into sweets; salted pistachios are the classic snack.
How do I keep pistachios fresh?
Store in an airtight container in a cool, dry place. In the fridge they stay fresh for up to 6 months.
