Using them in the kitchen

Soak a handful overnight, then blend for the creamy base of shahi korma or makhani gravies. Grind dry into powder for kaju katli and barfi. Chop into kheer and sheer khurma, or toast lightly in ghee as a warm garnish over biryani. Five minutes in a hot pan with a pinch of salt also gives you fresh roasted kaju on demand.
