Ingredients

  • 1 cup (about 140 g) raw almonds
  • 1 cup soft pitted dates (Medjool-style if available; or soften regular dates)
  • Pinch of salt
  • Optional: 1 tbsp nut butter, 2 tbsp desiccated coconut, 1 tbsp cocoa powder, cinnamon

Steps

  1. If dates feel hard, soak 5–10 minutes in warm water, drain, pat dry.
  2. Pulse almonds to a coarse meal (stop before nut butter).
  3. Add dates and salt; process until the mix holds when squeezed.
  4. If dry, add 1 tsp water or nut butter; if sticky, add a spoon of almond meal or coconut.
  5. Roll tablespoon portions into balls. Coat in coconut or cocoa if you like.
  6. Chill 20–30 minutes to firm.
No food processor? Finely chop almonds, mash soft dates with a fork or masher, knead together firmly — works for small batches.

Storage

Airtight container in the fridge up to 1 week, or freeze up to 1 month. Separate layers with baking paper.

Variations

  • Swap ¼ cup almonds for walnuts or cashews.
  • Add 1 tbsp chia for extra texture (see also overnight oats).
